How to Make Vonny's Fish With Ginger

  1. Preheat oven to 200°C (400°F).
  2. Wash and thinly slice 2 celery stalks, 1 cup of mushrooms, and 1 peeled and thinly sliced medium carrot.
  3. Steam or sauté the vegetables for 1-2 minutes until slightly softened. Reserve cooking liquid.
  4. Grate 1 tablespoon of fresh ginger.
  5. Cut 1 pound of fish fillets (or 1 pound whole fish) into 4 pieces. Season with salt and pepper.
  6. Lightly brush the fish with 1 tablespoon of olive oil (or melted butter).
  7. Cut a large piece of aluminum foil (at least twice as long as it is wide).
  8. Spoon half of the vegetable mixture onto one half of the foil.
  9. Place the fish fillets on top of the vegetables. Top with the remaining vegetables.
  10. Pour 1/4 cup of dry white wine and 1-2 tablespoons of the reserved vegetable cooking liquid over the fish and vegetables.
  11. Fold up the sides of the foil to create a sealed packet.
  12. Place the foil packet on a flat baking tray.
  13. Bake in the preheated oven for 15 minutes, or until the fish is cooked through and flakes easily with a fork.
  14. Carefully open the foil packet (be cautious of escaping steam).
  15. Serve the fish immediately, spooning the flavorful juices and vegetables over the fish.
