How to Make Watermelon Soda

  1. Cut 4 cups of seedless watermelon into chunks.
  2. Pulse the watermelon chunks in a food processor until completely pureed.
  3. Line a fine-mesh sieve with cheesecloth and place it over a large bowl. Pour the watermelon puree into the sieve.
  4. Let the juice drain for 20 minutes, stirring gently once or twice. Do not press the pulp; this will prevent cloudiness.
  5. Discard the remaining pulp. You should have approximately 2 cups of watermelon juice.
  6. In a separate bowl, whisk together 1 cup granulated sugar and the 2 cups watermelon juice until the sugar is completely dissolved.
  7. Stir in ¼ cup grenadine, 2 tablespoons lime juice, and a pinch of salt.
  8. To serve, fill glasses with ice. Add ½ cup watermelon syrup, and top with ½ cup sparkling water. Garnish with a watermelon wedge or fresh mint (optional).
