How to Make White Peach Sake
- Wash and halve 2 cups of ripe white peaches. Remove pits.
- In a large saucepan, combine 1 cup of water, 1/2 cup granulated sugar, 1 split and scraped vanilla bean (or 1 teaspoon vanilla extract), and 1 cinnamon stick.
- Bring the mixture to a boil over medium heat.
- Add the peach halves to the saucepan and simmer for 3 minutes.
- Remove the peaches from the saucepan and set aside.
- Puree the peaches using a food processor or immersion blender.
- Strain the peach puree through a fine-mesh sieve into the saucepan, pressing to extract as much liquid as possible. Discard the solids.
- Return the strained peach mixture to the saucepan and bring to a boil over medium heat.
- Reduce the heat to low and simmer, stirring occasionally, until the mixture has reduced to about 1/3 of its original volume (approximately 10-15 minutes).
- Remove from heat and let the mixture cool completely.
- In a medium bowl, gently combine the cooled peach mixture with 1 cup of sake.
- Stir in 1-2 tablespoons of lemon juice, tasting and adjusting to your preference.
- Pour the White Peach Sake into a tall, lipped jug or serving pitcher.
- Refrigerate for at least 30 minutes before serving for optimal chill. Enjoy!
