How to Make Whole Orange Cake

  1. Preheat oven to 180°C (350°F). Grease and line a 20cm baking tin.
  2. Wash and thoroughly dry one large orange.
  3. Cut the orange into quarters and remove any seeds.
  4. In a food processor, combine: 200g self-raising flour, 200g caster sugar, 1 tsp baking powder, 1/2 tsp baking soda, and the quartered orange. Blend until completely smooth.
  5. If adding chocolate chips, add 100g of chocolate chips to the food processor and pulse until coarsely chopped. Do not over-process.
  6. Stir in 50g chopped nuts (optional).
  7. Pour the batter into the prepared baking tin.
  8. Bake for 50-60 minutes, or until a skewer inserted into the center comes out clean.
  9. Let the cake cool slightly in the tin before serving warm with cream or allowing to cool completely for icing.
