- Remove 500g package of puff pastry from freezer 2 hours before cooking to thaw.
- Line a large baking sheet with parchment paper.
- Lightly prick the parchment paper with a fork for ventilation.
- Fry 150g bacon until crisp. Remove from pan, drain on paper towels, and crumble.
- Finely chop 1 large onion (about 200g).
- Sauté onion until softened and translucent. Add 250g sliced mushrooms and cook until softened, about 5-7 minutes.
- Combine crumbled bacon, sautéed onion and mushrooms in a large bowl.
- Add 500g of your favourite sausage meat to the bowl and gently mix.
- On a lightly floured surface, roll out the thawed puff pastry to a large rectangle, at least 1.5cm thick.
- Transfer pastry to the prepared baking sheet.
- Spread the meat mixture evenly down the center of the pastry, leaving a 2-inch border on all sides.
- Season generously with black pepper (or any seasoning of your choice).
- Cut the exposed pastry on each long side into 1-inch strips, about 3 inches deep.
- Fold each end of the pastry over the filling. Then, alternately weave the strips from each side over the filling to create a braided effect.
- Brush the pastry with 1 beaten egg.
- **Option 1 (100 minutes):** Bake at 375°F (190°C) for approximately 1 hour and 15 minutes, or until golden brown and cooked through.
- **Option 2 (35 minutes):** Preheat oven to 400°F (200°C). Brown the meat, onion, and mushroom mixture beforehand (step 6 & 7). Assemble and bake at 400°F (200°C) for 15 minutes, then reduce temperature to 375°F (190°C) and bake for another 20 minutes.
