- Melt 2 tablespoons of butter in a 10-inch ovenproof skillet over medium-high heat.
- Add 1/2 cup chopped yellow onion and 1/2 cup chopped bell pepper (any color). Cook, stirring occasionally, until softened, about 7-8 minutes.
- Stir in 1 cup sliced mushrooms and 1/2 cup fresh or frozen corn. Cook for 2 more minutes.
- Add 1/2 cup diced ham and cook until heated through, about 1 minute.
- Add the remaining 1 tablespoon of butter to the skillet. Once melted, pour in the egg mixture.
- Sprinkle evenly with 2 tablespoons chopped fresh herbs (such as chives, parsley, and thyme) and 1/2 cup grated cheese (cheddar, Gruyere, or a blend).
- Reduce heat to medium and cook undisturbed for 3 minutes, or until the edges begin to set and the bottom is lightly browned.
