- Brown 1 lb bacon; remove and chop.
- Brown 1 lb Italian sausage, remove from pot.
- Brown 2 lbs ground beef; remove from pot.
- Add 1 large onion, 2 celery stalks, and 2 bell peppers (any color), chopped. Cook for 15 minutes.
- Add the cooked bacon, sausage, and beef to the pot. Stir in 2 tsp dried oregano, 2 tbsp Worcestershire sauce, and 4 cups beef broth. Cook for 15 minutes.
- Mix in 3 tbsp chili seasoning (recipe below), 4 cloves minced garlic, and 2 minced shallots.
- Cook for 15 minutes.
- Add 1 (10 oz) can diced roasted green chilies, undrained.
- Stir in 2 cups beef broth, the remaining chili seasoning, 1 tbsp Worcestershire sauce, salt & pepper to taste, and 1 tsp MSG (optional).
- Simmer for 1 hour.
- Add 1/2 cup brown sugar, 1/4 cup molasses, and 2-4 tbsp your favorite hot sauce (adjust to taste).
- Simmer for 15 minutes.
- Reduce heat to low and continue to simmer for at least 2 hours, or longer for a deeper flavor. The longer it simmers, the better it gets!
- Garnish with bacon bits, oyster crackers, sour cream, shredded sharp cheddar cheese, and diced red onion.
