  2. Brown 1 lb Italian sausage, remove from pot.
  3. Brown 2 lbs ground beef; remove from pot.
  4. Add 1 large onion, 2 celery stalks, and 2 bell peppers (any color), chopped. Cook for 15 minutes.
  5. Add the cooked bacon, sausage, and beef to the pot. Stir in 2 tsp dried oregano, 2 tbsp Worcestershire sauce, and 4 cups beef broth. Cook for 15 minutes.
  6. Mix in 3 tbsp chili seasoning (recipe below), 4 cloves minced garlic, and 2 minced shallots.
  7. Cook for 15 minutes.
  8. Add 1 (10 oz) can diced roasted green chilies, undrained.
  9. Stir in 2 cups beef broth, the remaining chili seasoning, 1 tbsp Worcestershire sauce, salt & pepper to taste, and 1 tsp MSG (optional).
  10. Simmer for 1 hour.
  11. Add 1/2 cup brown sugar, 1/4 cup molasses, and 2-4 tbsp your favorite hot sauce (adjust to taste).
  12. Simmer for 15 minutes.
  13. Reduce heat to low and continue to simmer for at least 2 hours, or longer for a deeper flavor. The longer it simmers, the better it gets!
  14. Garnish with bacon bits, oyster crackers, sour cream, shredded sharp cheddar cheese, and diced red onion.
