- Preheat oven to 200°C (400°F) and line a baking tray with baking paper.
- Blend 2 cups of bread into breadcrumbs using a food processor.
- In a large bowl, combine the breadcrumbs, 1 cup cooked lentils, 1/2 cup grated carrot, 1 large egg, 1/2 cup chopped walnuts, 2 tablespoons chopped chives, 2 tablespoons tomato sauce, and 1 tablespoon soy sauce. Mix thoroughly.
- Cover remaining filo pastry sheets with a damp tea towel to prevent drying.
- Lightly brush or spray one filo pastry sheet with olive oil.
- Cut the sheet in half lengthwise, then turn the strips so the short ends face you.
- Place 2 tablespoons of the lentil mixture onto each edge closest to you, about 5cm from the edge and 2cm from the sides.
