Zubereitung von Pepper Relish

  1. Combine 8 cups chopped banana peppers and 2 tablespoons salt in a large bowl. Mix well.
  2. Let stand for 2 hours to draw out moisture.
  3. Drain the peppers thoroughly in a colander.
  4. In a large, heavy-bottomed saucepan, combine 4 cups sugar, 4 cups white vinegar, and 2 tablespoons yellow mustard seed.
  5. Add the 2 slit jalapeno peppers to the saucepan.
  6. Bring the mixture to a rolling boil over medium-high heat.
  7. Reduce heat to medium-low, add the drained peppers, and simmer for 10 minutes, stirring occasionally.
  8. Carefully remove the whole jalapeno peppers from the relish.
  9. Ladle the hot relish into clean, sterilized half-pint jars, leaving 1/4-inch headspace.
  10. Remove air bubbles by gently running a non-metallic utensil around the inside of the jars.
  11. Wipe the jar rims clean, place lids and bands on jars, and tighten to fingertip tightness.
  12. Process in a boiling water bath canner for 10 minutes, adjusting for altitude if necessary. Ensure jars are completely submerged in boiling water.
  13. Remove jars from canner and let cool completely. You should hear a satisfying 'pop' sound as the jars seal.
