- Preheat oven to 275°F (135°C).
- Line a baking sheet with parchment paper. Spread 2 cups (475ml) thinly sliced apples evenly on the prepared baking sheet.
- Bake for approximately 90 minutes, or until apples are the consistency of raisins. Let cool completely.
- In a large bowl, combine 2 cups (250g) rolled oats, 1 cup (100g) unsweetened shredded coconut, ½ cup (75g) sunflower seeds, ½ cup (75g) pumpkin seeds, and 1 cup (75g) your favorite cereal.
- In a separate bowl, combine 1 cup (200g) pitted dates and ½ cup (120ml) sunflower butter. Using your hands, thoroughly mash the dates and sunflower butter until it forms a sticky paste.
- Add the date and sunflower butter mixture to the oat mixture. Mix with your hands until well combined and the mixture holds its shape when squeezed.
- Stir in the cooled baked apples.
- Line an 8x11 inch baking dish with parchment paper or aluminum foil. Press the apple mixture firmly into the dish.
- Refrigerate for at least 1 hour, or until firm.
- Remove from the baking dish and slice into 16 bars.
