Cómo preparar Apple Bread Pudding With Hard Cider Sauce

  1. Preheat oven to 350°F (175°C).
  2. Grease a 10x14 inch baking dish with 2 tablespoons of butter and set aside.
  3. In a large bowl, whisk together 4 large eggs.
  4. Add 2 cups heavy cream, 1 cup hard cider, ¾ cup granulated sugar, 4 tablespoons melted unsalted butter, ½ teaspoon salt, and 1 teaspoon ground cinnamon. Whisk until well combined.
  5. Add 6 cups cubed stale bread (challah, brioche, or a similar bread works well), 1 cup peeled and diced fresh apples, and ½ cup chopped dried apples. Gently stir until the bread is evenly moistened.
  6. Pour the mixture into the prepared baking dish. Cover with plastic wrap and refrigerate for at least 30 minutes, or up to 1 hour, to allow the bread to fully absorb the custard.
  7. Remove from the refrigerator and bake for 50-60 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
  8. Remove from oven and let stand on a wire rack for 15 minutes before serving.
  9. Meanwhile, prepare the hard cider sauce:
  10. In the top of a double boiler, or a heatproof bowl set over a pan of simmering water, melt 2 tablespoons of butter.
  11. Add ¼ cup granulated sugar and whisk for 1 minute until combined.
  12. Add ½ cup hard cider and whisk until the sugar is completely dissolved (about 2 minutes).
  13. Remove from heat and whisk in 2 large egg yolks, one at a time, whisking constantly to prevent scrambling.
  14. Return to the heat and whisk continuously until the sauce is pale, smooth, and slightly thickened (about 5 minutes).
  15. Remove from heat and let cool slightly.
  16. Cut the bread pudding into pieces and drizzle generously with the hard cider sauce.
  17. Serve warm and enjoy!
