How to Make Apple Bread Pudding With Hard Cider Sauce
- Preheat oven to 350°F (175°C).
- Grease a 10x14 inch baking dish with 2 tablespoons of butter and set aside.
- In a large bowl, whisk together 4 large eggs.
- Add 2 cups heavy cream, 1 cup hard cider, ¾ cup granulated sugar, 4 tablespoons melted unsalted butter, ½ teaspoon salt, and 1 teaspoon ground cinnamon. Whisk until well combined.
- Add 6 cups cubed stale bread (challah, brioche, or a similar bread works well), 1 cup peeled and diced fresh apples, and ½ cup chopped dried apples. Gently stir until the bread is evenly moistened.
- Pour the mixture into the prepared baking dish. Cover with plastic wrap and refrigerate for at least 30 minutes, or up to 1 hour, to allow the bread to fully absorb the custard.
- Remove from the refrigerator and bake for 50-60 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
- Remove from oven and let stand on a wire rack for 15 minutes before serving.
- Meanwhile, prepare the hard cider sauce:
- In the top of a double boiler, or a heatproof bowl set over a pan of simmering water, melt 2 tablespoons of butter.

- Remove from heat and whisk in 2 large egg yolks, one at a time, whisking constantly to prevent scrambling.
- Return to the heat and whisk continuously until the sauce is pale, smooth, and slightly thickened (about 5 minutes).
- Remove from heat and let cool slightly.
- Cut the bread pudding into pieces and drizzle generously with the hard cider sauce.
