Cómo preparar Brazilian Flan

  1. Preheat oven to 350°F (175°C).
  2. Make the caramel: In a medium saucepan over medium heat, combine 1/2 cup of sugar and 1/2 cup of water. Cook, without stirring, until the sugar dissolves and turns into a deep amber color. Carefully pour the caramel into a 9-inch round baking dish, swirling to coat the bottom and sides.
  3. In a blender, combine sweetened condensed milk, evaporated milk, eggs, optional coconut, optional Parmesan cheese, and optional lemon zest. Blend until smooth and creamy.
  4. Carefully pour the flan mixture over the caramel in the baking dish.
  5. Place the baking dish in a larger roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the baking dish (this creates a water bath).
  6. Bake for 90 minutes, or until the flan is set and no longer jiggles in the center.
  7. Remove from the oven and let cool completely on a wire rack.
  8. Once cooled, cover and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the flan to set completely.
  9. To serve, run a thin knife around the edges of the flan to loosen it. Invert the flan onto a serving plate. Enjoy!
