How to Make Brazilian Flan
- Preheat oven to 350°F (175°C).
- Make the caramel: In a medium saucepan over medium heat, combine 1/2 cup of sugar and 1/2 cup of water. Cook, without stirring, until the sugar dissolves and turns into a deep amber color. Carefully pour the caramel into a 9-inch round baking dish, swirling to coat the bottom and sides.
- In a blender, combine sweetened condensed milk, evaporated milk, eggs, optional coconut, optional Parmesan cheese, and optional lemon zest. Blend until smooth and creamy.
- Carefully pour the flan mixture over the caramel in the baking dish.
- Place the baking dish in a larger roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the baking dish (this creates a water bath).
- Bake for 90 minutes, or until the flan is set and no longer jiggles in the center.
- Remove from the oven and let cool completely on a wire rack.
- Once cooled, cover and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the flan to set completely.
- To serve, run a thin knife around the edges of the flan to loosen it. Invert the flan onto a serving plate. Enjoy!
