Cómo preparar Chow Chow

  1. Wash and roughly chop 10 pounds green tomatoes and 2 pounds ripe red tomatoes.
  2. Finely chop 4 large green bell peppers, 2 large onions, and 2 cups of chopped fresh hot pepper (adjust to your spice preference).
  3. In a large pot, combine the chopped vegetables with 2 cups of white vinegar, 2 cups of apple cider vinegar, 1 cup of sugar, 1/2 cup of salt, 2 tablespoons of celery seed, 2 tablespoons of mustard seed, 1 tablespoon of turmeric, and 1 teaspoon of black pepper.
  4. Bring the mixture to a boil over high heat, then reduce heat to a simmer. Cook for 45 minutes, or until the vegetables are tender and the mixture has thickened.
  5. Sterilize your jars and lids in boiling water for at least 10 minutes.
  6. Carefully ladle the hot chow chow into the sterilized jars, leaving 1/2 inch of headspace.
  7. Remove any air bubbles using a non-metallic utensil.
  8. Wipe the rims of the jars clean, place lids and rings on top, and tighten fingertip tight.
  9. Process the jars in a boiling water bath for 15 minutes (adjust processing time according to your altitude).
  10. Remove jars from the canner, let them cool completely, and check for seals. Store in a cool, dark place.
