  1. Preheat oven to 200°C (400°F).
  2. Lightly grease a 7cm deep, 13cm x 24cm loaf pan.
  3. In a large bowl, combine 500g ground beef, 1 medium onion (finely chopped), 2 cloves garlic (minced), 1 medium carrot (grated), 1/2 cup barbecue sauce, 1 large egg, 1/4 cup all-purpose flour, 1 tbsp dried rosemary, and 1 tbsp dried oregano. Mix well to combine.
  4. Spoon half the meat mixture into the prepared loaf pan, pressing down firmly to create an even layer.
  5. Arrange 2 medium sweet potatoes (peeled and thinly sliced) in a single layer over the mince mixture. Sprinkle with 1 tbsp fresh tarragon and 1 tbsp fresh basil.
  6. Top with the remaining sweet potatoes, followed by the remaining mince mixture. Press down firmly to level the top.
  7. Bake for 45 minutes, or until the meatloaf is browned and pulls away from the sides of the pan.
  8. Spread 1/2 cup tomato sauce over the top. Arrange 2-3 sliced tomatoes and 1/4 cup pine nuts over the tomato sauce.
  9. Bake for an additional 15 minutes, or until the meatloaf is cooked through and the tomatoes are softened.
  10. Let the meatloaf rest for 10 minutes before slicing and serving with asparagus.
