  1. In a large mixer bowl, combine yeast, sugar, and 1/3 cup warm milk. Let stand until foamy, about 5 minutes.

  9. Cover the pan loosely with a kitchen towel and let the dough rise again in a warm, draft-free place until doubled and the dough almost fills the pan (about 1-1 1/2 hours).
  10. Preheat oven to 375°F (190°C). Position a rack in the middle of the oven.
  11. Brush the tops of the rolls with the egg wash (beaten egg and water).
  12. Bake for 20-25 minutes, or until the rolls are deeply golden brown.
