  1. Remove all but 4 tablespoons of fat from the roasting pan, reserving extra for later use if desired.

  6. In a small bowl, whisk together the cornstarch and cold water until smooth to create a slurry.
  7. Reduce heat to low. Slowly whisk the cornstarch slurry into the gravy, stirring constantly.
  8. The gravy will thicken almost immediately. Continue to cook and stir for 2-3 minutes, or until it reaches your desired consistency.
  9. If you prefer a thicker gravy, whisk together 1 teaspoon of cornstarch with 1 tablespoon of cold water and add to the gravy, stirring constantly for another minute or two.
  10. Season generously with salt and pepper to taste. Taste and adjust seasonings as needed.
