- Stir for at least 2 minutes until the gelatin is completely dissolved.
- Add enough ice cubes to 1 cup (240ml) cold water to measure 2 cups (480ml) total.
- Add the ice water mixture to the gelatin mixture.
- Stir until the ice is completely melted.
- Pour the red gelatin evenly into 16 paper or plastic cups, filling each about ¼ cup (60ml).
- Freeze for 1 hour.
- Meanwhile, in a separate medium bowl, combine 1 (3 ounce) package blue gelatin mix and ½ cup (100g) granulated sugar.
- Add 1 cup (240ml) boiling water.
- Stir for at least 2 minutes until the gelatin is completely dissolved.
- Add enough ice cubes to 1 cup (240ml) cold water to measure 2 cups (480ml) total.
- Add the ice water mixture to the gelatin mixture.
- Stir until the ice is completely melted.
- Refrigerate the blue gelatin for 1 hour.
- Spoon approximately 3 tablespoons (45ml) of whipped cream over the red gelatin in each cup.
- Top each cup evenly with the blue gelatin, adding about ¼ cup (60ml) to each.
- Freeze for 1 hour, or until almost firm.
- Insert a wooden popsicle stick or plastic spoon into the center of each cup for a handle.
- Freeze for an additional 4 hours or overnight.
- To remove the pops, place the bottom of each cup under warm running water for 15 seconds.
- Press firmly on the bottoms of the cups to release the pops.
- Do not twist or pull on the popsicle sticks.
