How to Make Rocket Pops

  7. Pour the red gelatin evenly into 16 paper or plastic cups, filling each about ¼ cup (60ml).
  8. Freeze for 1 hour.
  9. Meanwhile, in a separate medium bowl, combine 1 (3 ounce) package blue gelatin mix and ½ cup (100g) granulated sugar.
  10. Add 1 cup (240ml) boiling water.
  11. Stir for at least 2 minutes until the gelatin is completely dissolved.
  12. Add enough ice cubes to 1 cup (240ml) cold water to measure 2 cups (480ml) total.
  13. Add the ice water mixture to the gelatin mixture.
  14. Stir until the ice is completely melted.
  15. Refrigerate the blue gelatin for 1 hour.
  16. Spoon approximately 3 tablespoons (45ml) of whipped cream over the red gelatin in each cup.
  17. Top each cup evenly with the blue gelatin, adding about ¼ cup (60ml) to each.
  18. Freeze for 1 hour, or until almost firm.
  19. Insert a wooden popsicle stick or plastic spoon into the center of each cup for a handle.
  20. Freeze for an additional 4 hours or overnight.
  21. To remove the pops, place the bottom of each cup under warm running water for 15 seconds.
  22. Press firmly on the bottoms of the cups to release the pops.
  23. Do not twist or pull on the popsicle sticks.
