  4. Return beef to the pot. Add 4 cups beef broth, 1 cup dry red wine (optional), 1 bay leaf, and 1 tsp black pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for at least 2 hours, or until beef is very tender.
  6. If the stew becomes too thick, add more broth as needed. If it's too thin, remove the lid for the last 30 minutes to reduce the liquid.
  7. Remove bay leaf before serving. Taste and adjust seasoning with salt and pepper to your liking.
