  7. Cook and stir for 1 minute more.
  8. Stir in 1 (13.5 oz) can full-fat coconut milk, 1/2 cup mango chutney, 1 tbsp lemon zest, and 1 tsp salt.
  9. Mix well.
  10. Add the cooked chicken, 2 medium apples (or 1 large mango), peeled and diced, to the skillet.
  11. Cover and simmer over low heat for 15 minutes.
  12. Stir in 1 cup frozen peas and 1/4 cup chopped fresh cilantro.
  13. Simmer, uncovered, for 5 more minutes.
  14. Serve hot over a bed of cooked basmati rice.
