- Cook and stir for 1 minute more.
- Stir in 1 (13.5 oz) can full-fat coconut milk, 1/2 cup mango chutney, 1 tbsp lemon zest, and 1 tsp salt.
- Mix well.
- Add the cooked chicken, 2 medium apples (or 1 large mango), peeled and diced, to the skillet.
- Cover and simmer over low heat for 15 minutes.
- Stir in 1 cup frozen peas and 1/4 cup chopped fresh cilantro.
- Simmer, uncovered, for 5 more minutes.
- Serve hot over a bed of cooked basmati rice.
