  1. Dice 1 medium onion, 2 carrots, 2 zucchini, 8 oz cremini mushrooms, and 1 medium potato (about 1 cup diced).

  3. Add 6 cups vegetable broth, 1 (28 ounce) can crushed tomatoes, 1 (15 ounce) can stewed tomatoes, 3 tablespoons chopped fresh parsley, 2 tablespoons chopped fresh cilantro, 2 cloves minced garlic, 1 teaspoon dried basil, and 1/2 teaspoon dried oregano.
  4. Bring the mixture to a boil over medium-high heat.
  5. Reduce heat to low, cover, and simmer for 30 minutes, or until vegetables are tender.
  6. Carefully strain the cooking liquid into a large saucepan, reserving the cooked vegetables.
  7. Place 3 cups of the cooked vegetables in a blender.
  8. Add 1/4 cup of the reserved cooking liquid to the blender.
  9. Puree until completely smooth.
  10. Stir the vegetable puree into the remaining cooking liquid in the saucepan.
  11. Return the remaining cooked vegetables to the saucepan.
  12. Season generously with salt and pepper to taste.
  13. Bring the soup back to a simmer over low heat.
  14. Ladle the soup into bowls.
  15. Garnish with extra fresh parsley.
  16. Serves 8.
