Como fazer Plum Date Chutney

  1. Preheat grill to medium-high heat. Line a grill pan with foil.
  2. In a bowl, toss 1 large red onion, thinly sliced, with 2 tablespoons olive oil. Spread in a single layer on the prepared grill pan.

  4. While onions grill, combine 500g plums, pitted and sliced, 150g pitted dates, chopped, 2 tablespoons red wine vinegar, 1 tablespoon balsamic vinegar, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, and 1/4 teaspoon ground cloves in a large bowl.
  5. Add the hot grilled onions to the bowl with the plums and other ingredients. Stir gently to combine.
  6. Let the chutney marinate for at least 1 hour at room temperature. Taste and adjust seasoning with salt, pepper, and up to 1 tablespoon of extra sugar to your liking.
  7. Serve with cold meats, cheeses, or stuffed into pita bread with strong cheese. Store leftovers in an airtight container in the refrigerator for up to one week (if they last that long!).
