Como fazer Pork Mandarin

  1. Preheat oven to 170°C (325°F) or gas mark 3.
  2. Trim excess fat from 500g pork loin and discard. Cut the pork into 2cm bite-sized pieces.
  3. Heat 2 tablespoons of vegetable oil in a large oven-safe skillet or Dutch oven over medium-high heat. Brown the pork in batches, ensuring not to overcrowd the pan. Remove the browned pork and set aside.
  4. Add 1 large onion (chopped), 2 cloves garlic (minced), and 1 red bell pepper (chopped) to the skillet. Cook until softened, about 5 minutes.
  5. Stir in 1 tbsp ginger (grated), 1/2 cup chicken broth, 1/4 cup soy sauce, 2 tbsp honey, 1 tsp ground ginger, 1/2 tsp red pepper flakes (optional).
  6. Return the browned pork to the skillet. Bring to a simmer.
  7. Transfer the skillet to the preheated oven and cook for 50-60 minutes, or until the pork is tender and the sauce has thickened.
  8. Drain one 400g can of mandarin oranges and gently stir them into the casserole during the last 10 minutes of cooking.
  9. Serve hot over savory rice or your favorite side dish.
