How to Make Pork Mandarin

  1. Preheat oven to 170°C (325°F) or gas mark 3.
  2. Trim excess fat from 500g pork loin and discard. Cut the pork into 2cm bite-sized pieces.
  3. Heat 2 tablespoons of vegetable oil in a large oven-safe skillet or Dutch oven over medium-high heat. Brown the pork in batches, ensuring not to overcrowd the pan. Remove the browned pork and set aside.
  4. Add 1 large onion (chopped), 2 cloves garlic (minced), and 1 red bell pepper (chopped) to the skillet. Cook until softened, about 5 minutes.
  5. Stir in 1 tbsp ginger (grated), 1/2 cup chicken broth, 1/4 cup soy sauce, 2 tbsp honey, 1 tsp ground ginger, 1/2 tsp red pepper flakes (optional).
