How to Make A Fabulous Vinegar Pudding

  1. Preheat oven to 160°C (320°F).
  2. In a large bowl, cream together 175g (1 1/2 cups) all-purpose flour, 175g (1 1/2 cups) granulated sugar, and 175g (1 1/2 sticks) unsalted butter until light and fluffy. Add 2 tsp baking powder and mix well.
  3. In a separate bowl, whisk together 3 large eggs, 300ml (1 1/4 cups) milk, and 100g (1/2 cup) apricot jam until well combined.
