How to Make Almond Jelly With Fruit Salad
- In a large saucepan, combine 1 cup granulated sugar and 2 cups water. Bring to a boil over medium heat, stirring constantly until sugar dissolves completely.
- Remove from heat and carefully sprinkle 2 tablespoons of powdered gelatin over the hot sugar syrup. Let it sit for 1 minute to soften.
- Gently stir the gelatin until it is completely dissolved in the syrup.
- Stir in 1 teaspoon almond extract, 1 can (14 ounces) sweetened condensed milk, and 3 cups of cold water. Mix until thoroughly combined and smooth.
- Pour the mixture into a 19 x 29 cm (approximately 7.5 x 11.5 inch) rectangular baking dish or similar sized container.
- Refrigerate for at least 6 hours, or preferably overnight, until the jelly is firm and set.
- Once set, use a sharp knife to cut the jelly into 2 cm cubes.
- Arrange the cubed almond jelly in individual serving bowls. Top with your favorite fresh fruit salad (strawberries, blueberries, kiwi, etc.).
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
