How to Make Amish Pot Roast
- Preheat oven to 325°F (160°C).
- Do not pound or flour the beef chuck roast.
- Heat 2 tablespoons of vegetable oil in a heavy skillet over high heat. Sear the roast on all sides until nicely browned (about 2-3 minutes per side).
- In a large roasting pan (at least 5-quart), combine 1 cup soy sauce, 1 cup strong brewed coffee, 2 bay leaves, 4 minced garlic cloves, and 1 teaspoon dried oregano.
- Add 1 of the thinly sliced onions to the roasting pan.
- Transfer the seared roast to the roasting pan, placing it on top of the onions.
- Top the roast with the remaining sliced onion.
- Cover the roasting pan tightly with a lid or aluminum foil.
- Bake for 3 1/2 to 4 hours, basting every 30 minutes with pan juices. If the liquid begins to evaporate significantly, add another 1/2 cup of coffee and a splash of soy sauce.
- The roast is done when it is fork-tender and easily shreds. There should be a good amount of flavorful liquid remaining.
- Remove the roast from the oven and let it rest for 10-15 minutes before slicing.
- Slice the roast against the grain into thin slices. Serve with the delicious pan juices.
