Ingredients for Angel Meringue Bites

  • 3 large egg whites
  • Splenda Granular
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Nutella
  • Jam
  • Frosting
  • Ganache

How to Make Angel Meringue Bites

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a clean, grease-free medium-sized mixing bowl, beat 3 large egg whites with an electric mixer until soft peaks form.
  3. Gradually add 1/2 cup Splenda (or other granulated sugar substitute), 1 teaspoon vanilla extract, and a pinch of salt.
  4. Continue beating on high speed until stiff, glossy peaks form (about 3-5 minutes).
  5. Spoon rounded tablespoons of meringue mixture onto the prepared baking sheet, leaving about 2 inches between each meringue.
  6. Bake for 10-15 minutes, or until the meringues are golden brown and crisp.
  7. Remove from oven and let cool completely on the baking sheet before transferring to a wire rack.
  8. To assemble: Just before serving, sandwich two meringue cookies together with your favorite filling (whipped cream, chocolate ganache, jam, etc.) by spreading the filling on the bottom of one cookie and topping with another.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
