How to Make Auntie Maebelle S Oven Kalua Pork
- Preheat oven to 500°F (260°C).
- Score a 3-4 pound pork shoulder in several places, about 1 inch deep. Generously rub with 2 tablespoons of salt and 1 tablespoon of liquid smoke.
- Wrap the pork tightly in 2-3 large ti leaves (or substitute with heavy-duty aluminum foil for easier preparation). Then, wrap the ti leaves (or foil) in another layer of heavy-duty aluminum foil. Place the wrapped pork on a small wire rack inside a roasting pan.
- Reduce oven temperature to 350°F (175°C).
- Pour 1 cup of water into the bottom of the roasting pan.
- Bake for 4 hours, or until the pork is easily shredded with a fork. Internal temperature should reach 190-200°F (88-93°C).
- Carefully remove the pork from the oven and let it rest for 15-20 minutes. Shred the pork using two forks. Add juices from the roasting pan to the shredded pork, to taste.
