Ingredients for Auntie Maebelle S Oven Kalua Pork

  • Pork Butt
  • 2 tablespoons kosher salt
  • 1 tablespoon liquid smoke
  • 2-3 large ti leaves (or substitute with heavy-duty aluminum foil)
  • Aluminum Foil

How to Make Auntie Maebelle S Oven Kalua Pork

  1. Preheat oven to 500°F (260°C).
  2. Score a 3-4 pound pork shoulder in several places, about 1 inch deep. Generously rub with 2 tablespoons of salt and 1 tablespoon of liquid smoke.
  3. Wrap the pork tightly in 2-3 large ti leaves (or substitute with heavy-duty aluminum foil for easier preparation). Then, wrap the ti leaves (or foil) in another layer of heavy-duty aluminum foil. Place the wrapped pork on a small wire rack inside a roasting pan.
  4. Reduce oven temperature to 350°F (175°C).
  5. Pour 1 cup of water into the bottom of the roasting pan.
  6. Bake for 4 hours, or until the pork is easily shredded with a fork. Internal temperature should reach 190-200°F (88-93°C).
  7. Carefully remove the pork from the oven and let it rest for 15-20 minutes. Shred the pork using two forks. Add juices from the roasting pan to the shredded pork, to taste.
  8. Serve immediately and enjoy! This kalua pig is delicious on its own or served with traditional Hawaiian sides like poi, lomi salmon, and rice.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
