How to Make Apple Glazed Stuffed Pork Chops
- Preheat oven to 350°F (175°C).
- Using a sharp knife, carefully create a pocket in the side of each pork chop, cutting towards the bone but being careful not to cut all the way through.
- In a medium bowl, prepare the stuffing (see ingredient list for details).
- Evenly distribute the stuffing mixture among the pork chops, filling each pocket.
- Place the stuffed pork chops in an ungreased 13x9-inch baking pan.
- Bake uncovered for 30 minutes.
- While the pork chops are baking, prepare the apple glaze:
- In a 1-quart saucepan, whisk together 1/2 cup granulated sugar and 2 tablespoons cornstarch.
- Gradually whisk in 1 cup apple juice.
- Cook over medium-low heat, stirring constantly, until the mixture comes to a boil and thickens, about 5-7 minutes.
- Remove from heat and stir in 2 tablespoons of butter until melted and smooth.
- Pour the glaze evenly over the pork chops in the baking pan.
- Continue baking uncovered for another 30-35 minutes, or until the pork chops reach an internal temperature of 145°F (63°C) and are no longer pink in the center.
