How to Make Apple Butter Pork Loin
- Preheat oven to 350°F (175°C).
- Place the 2-3 lb pork loin in a baking dish. Pour 1 cup of apple juice over the pork loin. Cover the baking dish tightly with a lid or aluminum foil.
- Bake for 1 hour.
- While the pork loin is baking, prepare the apple butter mixture (see step 5).
- In a medium bowl, whisk together 1 cup apple butter, 1/4 cup brown sugar, 2 tablespoons Dijon mustard, 1 tablespoon apple cider vinegar, and 1 teaspoon ground cinnamon.
- After the initial hour of baking, remove the pork loin from the oven. Carefully remove the lid. Spread the apple butter mixture evenly over the top of the pork loin.
- Return the pork loin to the oven, uncovered, and bake for an additional 1.5-2 hours, or until the internal temperature reaches 145°F (63°C) and the juices run clear. Basting halfway through is recommended for even browning and flavor.
- Let the pork loin rest for 10-15 minutes before carving and serving. Enjoy!
