How to Make Banana Health Loaf

  1. Preheat oven to 350°F (175°C). Grease and flour an 8x4 inch loaf pan.
  2. In a large bowl, whisk together 1 ½ cups all-purpose flour, ½ cup unsweetened shredded coconut, 2 teaspoons baking powder, 1 teaspoon baking soda, and ½ teaspoon salt.
  3. In a separate bowl, mash 3 ripe bananas with a fork. Add ¼ cup vegetable oil and ¼ cup honey. Mix well.
  4. Gently stir the wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. Pour batter into the prepared loaf pan and spread evenly.
  6. Bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Once completely cool, wrap the loaf in waxed paper and store overnight before slicing. This allows the flavors to meld.
  9. For longer storage (beyond 2 days), refrigerate.
