  • 3 tablespoons granulated sugar
  • 3 ripe bananas, mashed
  • Fresh Lime Juice
  • 1 large egg yolk
  • 3 large egg whites
  • Pinch of salt

How to Make Banana Souffles

  1. Preheat oven to 400°F (200°C).
  2. Generously spray four 1-cup ramekins with cooking spray.
  3. Add 1/2 tablespoon of granulated sugar to each ramekin. Rotate the ramekin to evenly coat the sides with sugar. Tap out any excess sugar into a small bowl.
  4. In a food processor, combine mashed bananas, lime juice, egg yolk, and 2 tablespoons of sugar. Process until completely smooth and creamy.
  5. Pour the banana mixture into a large bowl.
  6. In a clean, grease-free stainless steel or glass bowl, beat egg whites with a pinch of salt using a whisk or electric mixer until soft peaks form.
