How to Make Banana Stuffed Acorn Squash

  1. Preheat oven to 350°F (175°C).
  2. Cut acorn squash in half lengthwise.
  3. Scoop out seeds and pulp from each half, leaving about 1/4 inch of flesh on the sides.
  4. Remove the stem.
  5. In a medium bowl, mash 2 ripe bananas with a fork.
  6. Add 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, and 1 teaspoon vanilla extract to the mashed bananas.
  7. Stir in 2 tablespoons of vegan butter substitute (optional).
  8. Fill each acorn squash half with the banana mixture, spreading it evenly and mounding slightly in the center.
  9. Sprinkle the tops with a little extra cinnamon and nutmeg.
  10. Place the filled acorn squash halves in a baking dish. Pour 1/2 cup of water into the bottom of the dish.
  11. Bake for 45-60 minutes, or until the squash is tender and easily pierced with a fork.
