How to Make Acorn Squash With Apple Stuffing

  1. Preheat oven to 400°F (200°C).
  2. Wash and halve 1 medium acorn squash lengthwise. Scoop out seeds and stringy fibers.
  3. Place squash cut-side down in a baking pan. Add 1/2 inch of boiling water to the pan.
  4. Bake for 18-22 minutes, or until slightly tender.
  5. While squash bakes, prepare the apple stuffing: Peel, core, and dice 2 medium apples (about 2 cups).
  6. In a bowl, combine diced apples with 2 tablespoons honey, 4 tablespoons (1/2 stick) melted unsalted butter, and 1/4 teaspoon ground cinnamon (optional).
  7. Remove squash from oven. Turn cut-side up.
  8. Brush the cut sides of the squash with 2 tablespoons of melted unsalted butter.
  9. Sprinkle with salt and pepper to taste.
  10. Fill each squash half with the apple mixture.
  11. Cover the baking pan with foil.
  12. Reduce oven temperature to 375°F (190°C).
  13. Continue baking for 40-45 minutes, or until the squash is very tender and the stuffing is heated through.
