How to Make Acorn Squash With Apple Stuffing
- Preheat oven to 400°F (200°C).
- Wash and halve 1 medium acorn squash lengthwise. Scoop out seeds and stringy fibers.
- Place squash cut-side down in a baking pan. Add 1/2 inch of boiling water to the pan.
- Bake for 18-22 minutes, or until slightly tender.
- While squash bakes, prepare the apple stuffing: Peel, core, and dice 2 medium apples (about 2 cups).
- In a bowl, combine diced apples with 2 tablespoons honey, 4 tablespoons (1/2 stick) melted unsalted butter, and 1/4 teaspoon ground cinnamon (optional).
- Remove squash from oven. Turn cut-side up.
- Brush the cut sides of the squash with 2 tablespoons of melted unsalted butter.
- Sprinkle with salt and pepper to taste.
- Fill each squash half with the apple mixture.
- Cover the baking pan with foil.
- Reduce oven temperature to 375°F (190°C).
- Continue baking for 40-45 minutes, or until the squash is very tender and the stuffing is heated through.
