How to Make Apple Filled Acorn Squash

  1. Preheat oven to 350°F (175°C).
  2. Halve the acorn squash lengthwise and scoop out the seeds and stringy pulp using a spoon.
  3. Place the acorn squash halves cut-side down in a baking dish. Add about ½ inch of water to the bottom of the dish.
  4. Bake for 25 minutes.
  5. While the squash is baking, prepare the filling: In a large bowl, combine 1 medium apple (peeled, cored, and diced), ½ cup walnuts (chopped), ¼ cup maple syrup, 2 tablespoons brown sugar, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, and a pinch of salt.
  6. After 25 minutes, carefully flip the acorn squash halves cut-side up.
  7. Spoon the apple walnut mixture evenly into the cavities of the squash.
  8. Continue baking for another 20-25 minutes, or until the squash is tender and the filling is heated through. You can check for doneness by inserting a fork into the squash; it should easily pierce the flesh.
