- In a separate microwave-safe bowl, heat shredded chicken for 1-2 minutes on high until warmed through.
- Once potatoes are tender, carefully cut them open lengthwise.
- Fluff the inside of each potato with a fork.
- Top each potato with the shredded chicken, sour cream mixture, shredded cheese, and remaining 1 tablespoon of green onion.
