How to Make Beer Cheese Fried Potatoes
- Peel and cut 2 lbs russet potatoes into 1/2-inch thick slices.
- In a large 12-inch skillet, heat 1/4 cup vegetable oil over medium-high heat.
- Add the potatoes to the skillet in a single layer and season generously with salt and pepper.
- Cook, flipping occasionally, until the potatoes are lightly browned on all sides (about 8-10 minutes).
- Reduce heat to medium-low. Continue cooking, stirring occasionally, until the potatoes are tender but not mushy (about 10-15 minutes).
- Pour in 1/2 cup of beer and cover the skillet. Cook for 3 minutes to allow the alcohol to cook off.
- Reduce heat to low. Dot the top of the potatoes with 4 ounces of softened cream cheese.
- Cover and cook until the cream cheese is melted and the potatoes are heated through (about 2-3 minutes).
