How to Make Beets In Orange Apricot Sauce
- Boil 1 lb of beets in salted water until tender (about 20-25 minutes). Drain and allow to cool slightly. Once cool enough to handle, slip off the skins.
- While the beets cook, zest the orange using a microplane or fine grater. Segment the orange, removing all pith and seeds.
- In a small saucepan, combine the 1/2 cup apricot preserves and 1 tablespoon of orange liqueur (if using). Simmer over low heat for 2-3 minutes, stirring occasionally, until slightly thickened and heated through.
- Add the orange segments to the apricot sauce and stir gently to combine. Heat through for another minute.
