How to Make Bread Sauce

  1. Stud 1 medium onion with 6 cloves using a skewer.
  2. Place the studded onion, 1 bay leaf, and 1 tsp black peppercorns in a saucepan.
  3. Pour in 500ml whole milk.
  4. Bring the milk to a gentle simmer over medium heat.
  5. Remove from heat, cover, and let it steep for at least 1 hour. (The longer it steeps, the better!)
  6. Remove and discard the onion and bay leaf.
  7. Strain the milk through a fine-mesh sieve to remove the peppercorns.
  8. Return the milk to a clean saucepan. Add 100g fresh breadcrumbs.
  9. Cook over very low heat for 4-5 minutes, stirring frequently, until the breadcrumbs have absorbed the milk and the sauce has thickened.
  10. Remove from heat and stir in 50g unsalted butter until melted and smooth.
  11. Season generously with salt and freshly ground black pepper. Add a good grating of nutmeg (about 1/4 tsp).
  12. Just before serving, stir in 50ml double cream (optional) for extra richness.
