How to Make Bread Sauce
- Stud 1 medium onion with 6 cloves using a skewer.
- Place the studded onion, 1 bay leaf, and 1 tsp black peppercorns in a saucepan.
- Pour in 500ml whole milk.
- Bring the milk to a gentle simmer over medium heat.
- Remove from heat, cover, and let it steep for at least 1 hour. (The longer it steeps, the better!)
- Remove and discard the onion and bay leaf.
- Strain the milk through a fine-mesh sieve to remove the peppercorns.
- Return the milk to a clean saucepan. Add 100g fresh breadcrumbs.
- Cook over very low heat for 4-5 minutes, stirring frequently, until the breadcrumbs have absorbed the milk and the sauce has thickened.
- Remove from heat and stir in 50g unsalted butter until melted and smooth.
- Season generously with salt and freshly ground black pepper. Add a good grating of nutmeg (about 1/4 tsp).
- Just before serving, stir in 50ml double cream (optional) for extra richness.
