How to Make Brownie Alpine Biscotti

  1. Preheat oven to 350°F (175°C). Grease two baking sheets.
  2. In a large bowl, combine 1 box (15.25 oz) brownie mix, 1/2 cup ground almonds, 1/2 cup all-purpose flour, and 1 teaspoon baking powder.
  3. In a medium bowl, whisk together 1 large egg, 2 large egg whites, and 1 teaspoon vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Divide the dough into three equal portions.
  6. On a prepared baking sheet, shape each portion into a 7-inch x 3 1/2-inch rectangle.
  7. Bake for 24 minutes.
  8. Remove from oven and let cool on the baking sheet for 5 minutes.
  9. Transfer the rectangles to a cutting board and, using a serrated knife, cut each diagonally into 3/4-inch slices.
  10. Place the biscotti slices cut-side down onto prepared baking sheets.
  11. Bake for an additional 12-14 minutes, or until firm and golden brown.
  12. Remove from oven and let cool completely on wire racks.
  13. (Optional) Once cooled, drizzle with melted white or dark chocolate and sprinkle with sliced almonds. Let chocolate set completely before serving.
  14. Store in an airtight container at room temperature for up to a week.
