How to Make Butter Toffee Popcorn With Peanuts

  1. Pop one bag of microwave popcorn according to package directions. Pour into a large, sturdy paper bag, reserving about 1 cup of popcorn for later.
  2. Pour 1 cup of salted peanuts into the paper bag with the popcorn.
  3. Pop the second bag of microwave popcorn and add it to the paper bag with the peanuts and popcorn.
  4. In a large microwave-safe glass bowl, combine 1/2 cup (1 stick) unsalted butter, 1 cup packed light brown sugar, and 1/2 cup light corn syrup.
  5. Microwave on high for 3 minutes, stirring halfway through.
  6. Carefully remove the bowl from the microwave. Immediately stir in 1 teaspoon of baking soda. The mixture will bubble up!
  7. Quickly pour the toffee mixture over the popcorn and peanuts in the paper bag.
  8. Seal the bag tightly and shake vigorously to coat the popcorn and peanuts evenly.
  9. Microwave on high for 1 minute, then remove and shake again.
  10. Microwave for another 1 minute, or until the toffee is golden brown and caramelized.
  11. Immediately pour the toffee popcorn and peanuts onto a wax paper- or foil-lined baking sheet or trays to cool completely.
  12. Once cooled, break apart into pieces and store in an airtight container. Enjoy!
