How to Make Cinder Toffee

  1. Line a baking sheet with parchment paper.
  2. In a heavy-bottomed saucepan over medium heat, combine 1 cup granulated sugar, 1/2 cup light corn syrup, 1/4 cup water, and 1/4 cup butter.
  3. Stir gently until the butter is melted and the sugar is dissolved.
  4. Bring the mixture to a boil, without stirring, until it reaches 300°F (150°C) on a candy thermometer. This is the hard-crack stage.
  5. Remove from heat and stir in 1 teaspoon vanilla extract and 1/4 teaspoon salt (optional).
  6. Immediately pour the toffee onto the prepared baking sheet and spread it thinly and evenly.
  7. Let it cool completely and harden before breaking it into pieces.
  8. Once completely cooled and hard, break the toffee into irregular pieces.
