How to Make African Pineapple Peanut Stew

  1. Heat 1 tablespoon of olive oil in a covered saucepan over medium heat. Add 1 medium onion, chopped, and 2 cloves garlic, minced. Saute for 10 minutes, stirring frequently, until onions are lightly browned.
  2. While onions saute, wash and chop 1 bunch of kale. Remove stems and slice leaves crosswise into 1-inch thick pieces.
  3. Add 1 (20 ounce) can of pineapple chunks and its juice to the sauteed onions. Bring to a simmer.
  4. Stir in the chopped kale. Cover and simmer for 5 minutes, or until just tender, stirring occasionally.
  5. Stir in 1/2 cup creamy peanut butter and 1 teaspoon hot pepper sauce (or to taste). Simmer for another 5 minutes, allowing flavors to meld.
  6. Season with salt to taste. Serve hot over your favorite noodles.
