How to Make Cranberry Candy
- In a medium saucepan, combine 2 cups granulated sugar and 1 (16 ounce) can of whole berry cranberry sauce.
- Cook over medium heat, stirring constantly, until sugar is dissolved and mixture begins to boil.
- Add 1 (3 ounce) package of cranberry flavored gelatin and stir until completely dissolved.
- Stir in 1 cup of chopped walnuts or pecans.
- Lightly grease a 9x5x3 inch baking pan. Pour candy mixture into the prepared pan.
- Refrigerate for at least 4 hours, or until completely firm.
- Once firm, cut candy into small (1 to 1 1/2 inch) pieces.
- Roll the cut candies in 1 cup of granulated sugar to coat evenly.
- Place candies on a wire rack or parchment paper and let stand at room temperature for at least 24 hours to dry completely.
- After 24 hours, roll the candies in granulated sugar again for extra sweetness and shine. (Optional: For a firmer candy, add 1 1/2 packages of Knox unflavored gelatin along with the cranberry gelatin in step 3.)
