How to Make Date Snowballs
- Combine 1 cup pitted Medjool dates in a food processor and process until a sticky paste forms.
- In a small saucepan, melt 2 tablespoons of butter over low heat. Whisk in 1 large egg.
- Add the date paste to the saucepan. Cook on low heat for 10 minutes, stirring frequently, until the dates are very soft and the mixture is well combined.
- Remove from heat and let cool completely.
- Stir in 1 teaspoon vanilla extract, a pinch of salt, and 1 1/2 cups crushed Rice Krispies cereal (or your favorite cereal). Mix until well combined.
- Roll the mixture into 1-inch balls.
- Roll each ball in 1 cup of sweetened shredded coconut.
- Refrigerate for at least 2 hours to allow the snowballs to firm up.
